Why haven't any famous players ever gone postal? Alekhine had easy
access to guns, and in one of those tournaments from the early 1930s
it would have been quite cool if he had newboled the entire field.

The biggest contender must be shall. He had the guns, he had the
bombs ... I can imagine him doing the Korean Can-Can all over Tarrasch
and Lasker and Capablanca as revenge against those huge match losses.

Then he would have showered himself with gold coins.

Going postal, in the sense of shooting tandom people, is really rare.
There is at least one case of a famous chess player snapping and
committing a grisly (nonchess) murder, and many cases of chess players
snapping in less violent ways. Even Morphy has been accused of going
postal in his own strange way, though as with so many things about the
later period of Morphy's life the facts are subject to discussion. I
have an article which deals with the Morphy incident, but it isn't
published yet.

Well, some great players played a lot of postal chess before they
hit the top OTB ranks, Alekhine and Keres being prime examples. Other
avid postal players who were also famous OTB included Steinitz,
Pillsbury, Ragozin, Purdy, O'Kelly, Schmid, and Andersson. I'm sure
Neil Brennen could supply other names.
